4 lbs. flank steak, brisket or butt roast
1 (8 oz.) bottle soy sauce
1 (10 oz.)Worchestershire sauce
1 T Louisiana Hot sauce
2 T Liquid Smoke
1/4 tsp. salt per each pound of meat
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. lemon juice
lemon pepper seasoning to taste

Trim off all fat and cut into 1/4 inch thick lengthwise slices. (I ask the market butcher to slice for me) Mix all ingredients except lemon pepper for marinade. Marinate in sauce mixture at least 2 hours or I sometimes leave over night and start the drying process next morning as it does take a while. Remove from marinade and sprinkle with the lemon pepper. Use a food dehydrater if you have one. If not drape the strips over a rack in the oven. Bake at 150 degrees for about 12 hours Store in sealable containers.

This is a bit time consuming but makes the best beef jerky you ever tasted. I couldn't hide it well enough to worry about storing for long. My grandkids can sniff it out like a bloodhound!
