4 medium unpealed red potatoes
1/3 c. olive oil (Extra Light)
1 T real butter (Land O Lake)
1 T Tarragon Leaves (not whole)
Salt and Pepper to taste

Directions:
PreHeat oven to 350º. Make ready a baking dish with a lid that will be able to hold all your potatoes. Heat Olive Oil and butter in the baking dish by putting it in the oven when your oven is preheating. Meanwhile, wash, scrub and cut red potatoes. Cut potatoes into bited sized pieces. Take out the baking dish with the Olive Oil and butter in it and add your potatoes.(If you add your potatoes before the Olive Oil is warmed it will cause your potatoes to soak up the Olive Oil and they will be oily.) Sprinkle potatoes with salt, pepper and Tarragon leaves, cover and return to oven for about 10 minutes. then remove from oven and toss potatoes and put back in for about 10 to 15 minutes more or until slightly golden brown and soft.
