Ingredients: 2 C. Sugar 1/2 C. Crisco Oil 1 Stick Margarine 2 C. Flour 1 tsp. Soda 5 Eggs, separated 1 C. Buttermilk 1 tsp. Vanilla 1 Small can Angel Flake Coconut
Frosting: 1 (8oz) pkg. cream cheese 1 stick of margarine 1 box powdered sugar 1 tsp. vanilla 1 heaping cup chopped pecans
Frost between each layer and sprinke on some of the nuts. Frost top and sides of cake and completely cover the top with chopped pecans.

Directions:In a separate bowl, sift together the flour and soda. In a large bowl, cream together the sugar, oil, and stick of margarine. Add the egg yolks and vanilla and mix well. Add flour alternately with buttermilk. Mix well, and add the coconut. Beat egg whites until stiff and gently fold into the cake batter. Pour into 3 greased and floured 9" cake pans and bake at 350 deg. for approx. 25 min.

Notes: I originally got this recipe from Ruth Anderson a number of years ago but since I make it all the time, and she doesn't, she said I could claim it! It's a favorite with my family and friends. Donald always had to have one for his birthday and now it is Darla's birthday cake too.
