4 eggs
1 12 oz. carton small curd cottage cheese
1 pkg. cream cheese (softened)
3 Tbsp. flour
1/4 tsp. salt
1 tsp. vanilla
1/2 cup granulated sugar
1/3 cup powdered sugar
1/2 tsp. cream of tartar

Prepare in an 8 in. pan by heavily coating it with butter and dusting it with cookie or graham cracker crumbs.

Separate eggs. Blend together in blender egg yolks, cottage cheese, softened cream cheese, flour, salt, vanilla & granulated sugar. In a separate bowl, whip egg whites, powdered sugar, & cream of tartar until stiff. Fold cheese mixture into egg white mixture. Pour into pan. Sprinkle top with cinnamon and nutmeg.

Bake @ 275 for 60 min

The original recipe was given to my by Bel Detloff, my secretary at Holy Angels School in East St. Louis. It makes a large, more solid type of cheese cake. I have often make it for faculty get-togethers. Swirl in 1/2 to 3/4 cup of armaretto just before baking to give it a special twist.
