1 lb. fresh spinach
2-3 Tbsp. vegetable oil
1/2 tsp. salt
1 tsp. sugar

Make sure the spinach is washed and mostly dry. Put oil and salt in large skillet over high heat. Add spinach, then sugar. Cook & stir 1-2 min. or until spinach is well wilted.

Serve at once

This is one of my favorites from Sister Alice Ann Hickey, a sister I lived with in Tulane, CA. It's easy and delicious, and now that you can buy fresh spinach already washed, it's quick.
