1. 9" unbaked pie shell
2. 1 can cherry-pie filling (1 lb 5 oz)
3. 12 ounces cream cheese
4. ½ cup granulated sugar
5. 2 eggs
6. ½ tsp vanilla
7. 1 Tbsp grated lemon peel
8. ½ cup heavy cream
9. 2 Tbsp confectioners sugar

1. Preheat oven to 425º.
2. Set aside ¾ cup cherry pie filling. Spread remaining filling in unbaked pie shell.
3. Bake 15 minutes, or until crust is golden brown. Cool on wire rack.
4. Reduce oven temperature to 350º.
5. Meanwhile, in medium bowl with electric mixer at medium speed beat cream cheese, granulated sugar, eggs and vanilla until smooth. Stir in lemon peel. Pour cream cheese over cherry mixture in pie shell.
6. Bake 25-30 minutes. Filling will be set in center.
7. Cool completely.
8. Spread reserve cherry pie filling on top, leaving 1" margin around the edge.
9. Refrigerate until well chilled - about 1½ hours.
10.Beat cream with confectioners sugar until stiff. Place in pastry bag with number-6 star tip and pipe swirls around the edge of the pie.
