Ingredients:  
1. 2 cucumbers (peeled and scoop out seeds)
2. 3 cups chicken stock
3. 1 Tbsp chopped parsley
4. ½ cup finely chopped onion
5. 1 cup sour cream
6. ¼ tsp dill weed
7. Salt
8. Pepper

Directions:
Directions:
1. Dice one cucumber and place in sauce pan. Add onion and chicken stock. Simmer, covered, for 20 minutes. Cool slightly.
2. Pour mixture in blender and puree.
3. Grate other cucumber into pureed mixture.
4. Stir in sour cream, parsley, and dill. Season to taste.
5. Serve chilled.
