1 large Pork Loin or 2 small pork loins
1 8 oz pkg Cream cheese
Sliced Jalopenos
1 pkg Bacon slices
Cajun seasoning
Apricot jelly (you could use another flavor)

Directions:
Directions:
On a baking sheet, lay out slices of bacon on the short length of the pan. Cut your pork loin down the center lengthwise but not all the way through (butterfly it). Season it with cajun seasoning. Open it up and spread a layer cream cheese. Top the cream cheese to sliced jalopenos. Fold the pork loin closed and lay it on the baking sheet lined with bacon. Fold the bacon slices over and around the pork loin to hold the pork loin closed. Secure with tooth picks if necessary. Spread some Apricot jelly over the top of the stuffed pork loin. Bake at 375 degrees for 45-50 minutes depending on the size of the loin.
Slice and serve.
