Six large russet potatoes cleaned
1 tablespoon butter
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
2/3 cup yellow onion chopped
4 slices of baked ham (4 oz )
1 1/2 cups shredded colby cheese
2 tablespoons milk
2 tablespoons sour cream
For the roast
1 tablespoon black pepper
1 2 1/2 lb boneless rib roast
1/4 cup fresh parsley
1 tablespoon fresh chives
1 tablespoon fresh tarragon
1 teaspoon dried thyme

Directions:
Preheat over 40 degrees. Pierce potatoes with fork bake until tender about 1 hour.
Large non stick skillet melt butter over medium heat. Add peppers, onions and saute until tender. Add ham and saute for 5 minutes.

reduce over temp-to 350 degrees. slice tops off potatoes and scoop out pulp:reserve skins. In a bowl mash potatoes and add 1 cup Colby cheese, milk, sour cream and vegetable mixture. Spoon mixture into potato shells.
Sprinkle potatoes with remaining cheese bake 20 minutes.

Roast
Increase oven temperature to 425 degrees. Rub with pepper Place herbs in mixing bowl and chop using shears. place dryed and fresh herbs on wax paper and roll roast over herbs.loosely tie beef at 2 inch intervals place beef in roasting rack. for medium cook 30 minutes
