1 head cauliflower, trimmed
1/4 cup hemp seeds
1 bunch paraley, roughly chopped
2 large tomatoes, diced
1 cucumber, diced
1 large shallot, minced
3 garlic cloves, minced
1/4 cup extra-virgin olive oil
Grated zest and juice of 1 lemon
1 tsp sea salt

Directions:
Directions:
Use a food processor and pulse cauliflower until broken into small bits.

Transfer to bowl and add remainder of ingredients.

Toss well to combine, cover and refrigerate at least 2 hours before serving.
