2 eggs, lightly beaten
1 1/2 c. milk
1/4 c packed brown sugar
2 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
oil for deep frying
powdered sugar

Directions:
Directions:
In a bowl, combine eggs, milk, and brown sugar. In a separate bowl combine flour, baking powder, and salt; beat into egg mixture until smooth. In an electric skillet or deep fryer, heat oil to 375 alt-0186. (You can use a regular skillet just make sure that the oil is hot before pouring mix.) Cover the bottom of a funnel spout with your finger; pour 1/2 cup batter into the funnel. Holding the funnel several inches above the skillet, release finger and move the funnel in a spiral motion until all of the batter is released into the hot oil. Fry for 2 minutes on each side or until golden brown. Drain on paper towels. Repeat with remaining batter. Dust with powdered sugar; serve warm. If you don't have a funnel, you can just use a measuring cup instead.

I like to make this for the kids as a special treat. They especially like it when I add apple pie filling on top and then sprinkle the powder sugar on top.
