1 1/2 lbs. zucchini
1/4 cup diced onion
1 1/2 tsp. chili powder
1/2 tsp. cumin
1 tsp. salt
1 1/2 cups whole kernel corn
28-oz. can diced tomatoes
15-oz. can black beans
3/4 cup cornmeal
1 cup grated cheddar cheese

Directions:

Slice zucchini 1/8-inch thick. Brown zucchini and onion in oil. Add spices, corn, tomatoes, cornmeal and beans. Mix well. Pour into lightly greased 9-inch square baking pan. Top with grated cheese. Bake at 350 degrees for 30 minutes. Garnish with salsa if desired.

This is a good, quick casserole. Those that eat meat could add 1 lb. ground beef instead of the beans.
