1 TBSP balsamic vinegar
1 TBSP lime juice
1 garlic clove, crushed
1 red chili, seeded, and finely chopped
1 mango, diced
1 head fennel, trimmed and diced, feathery fonds reserved and snipped
1/2 cucumber, peeled, seeded, and diced
1 small red onion, diced
3 scallions
2-3 TBSP each fresh cilantro and flat-leaf parsley
2-3 TBSP shredded fresh mint

1. Put the balsamic vinegar, lime juice, garlic clove, and chili in a bowl, mix well, and marinate for 10-15 minutes.

2. Add the mango, the fennel (with a scattering of sniffed fennel fronds), the cucumber, onions, and herbs. Mix with two spoons, gently tossing together all the ingredients.
