*1 mango, diced
1 papaya, diced
1 small red onion, diced
3 tbsp lime juice (fresh)
1 chili, seeded and chopped
2 tbsp chopped fresh cilantro
2 tbsp shredded fresh mint

Directions:

* To peel and cube a mango:
1. cut the mango lengthwise in half, down one side of the pit. Slice down again on the other side of the pit.

2. Set aside the mango halves. Peel the skin from the flat center section, slice the flesh off the pit, and cut into cubes.

3. Score each mango half lengthwise and crosswise, cutting all the way to, but not through the skin.

4. Push out the skin as if you were pushing the half-mango inside out and cut the cubes off the skins.
