Ingredients: (This is Aunt Mary Dimitri’s recipe and she baked them at Easter time!)
One Day Before:
Cook thick skin orange cut in quarters with ¼ lb. sugar and a little water.
Next Day:
Cook 1 lb. of wheat with enough water to cover. When all water is absorbed, add 1 quart of milk and let that cook until all milk is absorbed, stirring constantly. Add 1 Tblspn. of butter and mix. Put aside to cool.
When wheat is cooled add 1 ½ cups of sugar; add 10 well beaten eggs into 3 lbs. of ricotta, chopped orange, chocolate chips and 1 tspn. cinnamon and stir well. Then add to wheat mixture.
Dough for Pies:
1 ½ cups of sugar ½ lb. of margarine 2 tspns. Vanilla 4 well beaten eggs 4 tspns baking powder
Cream and beat sugar, margarine together well; add vanilla and eggs and baking powder. Add flour until you can roll like a pie crust.
Grease pans with margarine and flour. Lay pie crust in 9" or 10" pie pan.
Pour in filling.
Cut some strips to put on top and brush top of pies with egg white.
Bake 375 degrees until golden brown.

Notes: This recipe is gold. I have another I found in an Italian cookbook that is great, too. However, this one is Aunt Mary Dimitri's. She is the only one in our family that ever made them (though I figure my Grandmother Stallone made them, too--unfortunately, she died when I was 4 1/2, so I don't know too much about her cooking.) I watched Aunt Mary make this pie and my Mom tried to write down the directions. So, I hope we didn't leave anything out. It is a special pie we eat at Easter time. The crust is sweet and it is the only pie I ever had with this type crust. I made it once and it came out pretty good. The only mistake I made was that I added the chocolate chips when the filling was still warm. They melted but it didn't affect the flavor, just the color.
It is a real Easter tradition in our family.
