3 sticks Butter
3 Med Onions
3 Ribs celery
2 Bell Peppers
1/2 Cup flour
4 Tablespoons Parsley
3 lbs. Shrimp or crawfish tails
2-3 Cups Half & Half
1 lb. Velvetta cheese
3 cloves garlic (minced)
1 lb Fettuccine pasta cooked (or egg noodles)

Directions:
Melt butter in a heavy large saucepan. Saute vegetables until tender. Add flour, stir and cook 15 minutes. Add parsley and seafood, cook 20 minutes, gently stirring. Add milk cheese and garlic, blend well. Season with salt and pepper. Cook 20 minutes. Add pasta & gently toss. Pour into a 3 quart casserole or deep pan. Sprinkle top with Parmesan cheese. Bake at 350 º until bubbly. About 20-30 minutes.

I add a cap of liquid seafood boil sometimes for a different tang. If too thick I add a little milk.
