2 cups persimmons
3 eggs
1 ½ cups sugar
1 ½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup melted butter
1 teaspoon ginger
2 ½ cups rich milk
½ teaspoon nutmeg
1 teaspoon cinnamon
1 cup raisins or nuts

Directions:

2 cups persimmons mashed. Beat in 3 eggs and 1 ½ cups sugar. Fold in; 1 ½ cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda, ½ teaspoon salt sifted together. Add ½ cup melted butter, 1 teaspoon ginger, 2 ½ cups rich milk, ½ teaspoon nutmeg, 1 teaspoon cinnamon and 1 cup raisins or nuts. Pour into 9” x 9” greased pan, bake until firm about 1 hour in 325 degree oven. Serve with hard sauce or whipped cream.
