1 lb. Sharp Cheddar Cheese (or Guyere)
3 tbsp. Flour
1 Clove Garlic
2 c. Dry White Wine
1 tbsp. Lemon Juice
3 tbsp. Kirsch
Nutmeg and Paprika to Taste

Directions:
Directions:
Cut cheese into small cubes, dredge in flour.

Rub pot with Garlic, pour in wine and set at moderate heat.

When bubbles rise up add lemon juice and cheese by handful's.

Stir until cheese melts, add kirsch and spices and blend together.

Continue to stir to keep smooth.
