2 large leeks
1 medium onion
3 T butter
salt and pepper to taste
2 medium potatoes, peeled and cubed
3 c chicken stock
1 c heavy (or even light) cream

Directions:
Directions:
Trim root ends of leeks. Cut off and discard half of green stems. Slit leeks lengthwise, rise and chop. Cook in butter with onions for 3-5 minutes. Add potatoes and chicken stock. Bring to boil, then simmer until pototoes are tender. Add cream and just bring to a boil. Remove from heat. Season with salt and pepper.
