Grandma EIV's Famous Butter Mints Recipe

Ingredients: |
Ingredients: 1 C boiling water 1/4 lb. butter (no substitute!) 1/8 tsp. salt 3 C sugar
4 drops oil of peppermint 2-3 drops green food coloring (optional)

Directions: |
Directions:Place ingredients in saucepan and cover, being careful not to stir until boiling and sugar crystals on sides have melted down. Remove lid and continue cooking until hard boil stage. Pour on large buttered slab or platter. Pick up with buttered hands as soon as you can stand the heat and PULL continuously. (Wear rubber gloves for the job - or just tough it out and deal with the blisters later.) Add oil of peppermint (& color, if using) and continue pulling until creamy and candy has lost its shiny appearance and looks dull. Form into ropes and place on wax paper. Cut immediately into bite size pieces, and separate until slightly dry. Place in airtight container for 24 hours and candy will mellow and melt in your mouth. |
