3 lbs red potatoes, unpeeled, diced
1/4 cup butter
1/4 cup flour
8 cups half and half
16 oz Velvetta
1/4 tsp white pepper
1/4 tsp garlic powder
1/2 lb fried bacon
1 cup sharp cheddar cheese, shredded
1/2 cup fresh chives

Directions:
Directions:
Boil potatoes in a pot of salted water. Let boil until about 3/4 done. Drain. In separate large pot, melt butter over low heat and stir in flour until smooth. Add half and half. Stir constantly until mixture thickens. Cut chunks of Velvetta and add gradually. Stir until melted. Add potatoes to cheese mixture. Stir in pepper and garlic. Cover and cook over low heat for 30 mins. Top with crumbled bacon, sharp shredded cheese, and chives before serving in soup bowls.
