1/2 cup crisco or 1 stick butter
1 1/2 cups sugar
2 eggs
1 cup buttermilk
2 oz red food coloring
2 tbsp cocoa
1 tsp vanilla
1 tbsp vinegar
1 tsp soda
2 1/2 cups cake flour
1 tsp salt

Cream Cheese-Nut Icing
1 pkg (8oz) cream cheese
1/2 cup soft margarine
1 box (16oz) confectioners sugar
2 tsp vanilla
1/3 cup pecans, chopped

Directions:
Directions:
Cream butter or crisco and sugar. Add eggs, one at a time, and beat. Make a paste of food coloring and cocoa. Add to mixture. Add salt to flour and sift. Add flour and buttermilk, alternating. Mix well. Add vanilla. Mix. Add soda to vinegar and fold-do not beat. Pour equal amounts into 3 greased and floured layer pans. Bake at 350º for 20-25 mins.

Icing
Combine cream cheese and margarine. Slowly add sugar and beat until smooth. Add vanilla and blend. Fold nuts into icing. Spread onto layers and sprinkle more chopped nuts on top, if desired.
