1 head garlic-top sliced off
2 tbsp olive oil
2 pork tenderloins (1-1 1/2 lbs each)
Salt and pepper
1 tbsp fresh rosemary, chopped
12 fresh sage leaves
1 tbsp fresh thyme, chopped
12 slices bacon
2 tbsp olive oil

Preheat oven to 300º. Place garlic head in small ramekin and drizzle with 1 tbsp olive oil. Cover with foil. Bake until soft, about 45 mins. When cool, squeeze flesh from head into small bowl. Rub each tenderloin with 1/2 garlic and season with salt and pepper. Mix herbs together and scatter over tenderloin. Wrap 6 slices of bacon around meat and secure with kitchen twine. Heat oven to 375º. In large skillet, sear tenderloins. Transfer to roasting pan and cook for 15 mins or until done.
