5 or 6 med yellow squash
1 pkg cornbread mix
salt & pepper to taste
Oil for frying

Directions:

Wash and slice squash into 1/4" slices. Place in large bowl, coat with cornbread mix seasoned with salt and pepper. ( You will need to be sure the squash is damp with water before coating) Place about 1" oil in skillet and heat. Spread squash evenly in pan, browning each side before turning. Drain well. (This can't be done too far ahead or it will be soggy)

Fried squash with the fresh peas make a great meal - I don't make this as often as I used to. Mamma Medlin was the best at this dish.
