2 steaks, strip or rib eye, about 1 1/2 inches thick or filet 2 1/2 inches thick
2 t grapesee or canola oil
kosher salt

Directions:
Remove steak from frig 2 hours before cooking time. Dry with paper towel. Preheat oven to 400º with rack in middle. In heavy cast iron skillet over med high heat, coat bottom with the oil. Liberally salt the steaks with kosher salt, about 3/4 t for each steak.

Place steaks in pan and sear for 2 minutes on each side, flipping only once with tongs. Transfer the steaks, still in the pan, to the oven and roast for 8-9 minutes for medium rare. Let steaks rest under foil tent for 5 minutes before serving.
