1 lb. dried navy beans
7 c water
1 ham bone
2 c cubed cooked smoked ham
1/4 c minced onion
1/2 t salt
1 bay leaf
pepper to taste

Directions:
Directions:
Rinse beans. Heat beans and water to boiling. Boil gently 8 minutes. Remove from heat. Cover and let stand one hour.

Add remaining ingredients. Heat to boiling. Reduce heat. Cover and simmer about 1 hour and 15 minutes or until beans are soft. Skim off foam occasionally. Add water as needed if too thick.

Remove bay leaf and ham bone. Trim meat from bone and add to soup. Season with salt and pepper to taste.

Mom said she never served us beans when we were young because she had to eat so many of them when she was little she never cared if she ate another. I never knew I liked beans until I ate this soup.
