2 tbsp. fresh lemon juice
2 tbsp. olive oil
1/2 tsp. crushed rosemary
1/8 to 1/4 tsp. crushed red pepper
1/2 to 1 tsp. black pepper
4 garlic cloves, crushed
4 skinless, boneless chicken breast halves
1 tsp. unsalted butter
1 tsp. vegetable oil
1 tsp. salt

Directions:
Place chicken in large dish. Combine lemon juice, olive oil, rosemary, hot pepper, black pepper, and garlic. Pour marinade over chicken and let stand at room temperature for 1 hour, turning once or twice. Remove chicken from marinade and pat dry. Melt butter and oil in large skillet. Add the chicken, smooth side down, and saute over medium heat, turning once, for 4 to 5 min. each side, until lightly browned and cooked through. Season with salt and serve hot or cold.
