Black Bean and Salsa Soup Recipe

2 (15 oz) cans black beans, drained and rinsed
1 1/2 c vegetable or chicken broth
1 c chunky salsa
1 1/2 tsp ground cumin
1 tsp minced garlic
1 T lime juice (optional)
1 handful frozen corn (optional)
2 T thinly sliced green onion

Directions:
Directions:
1. In an electric food processor or blender, combine beans, broth, salsa, cumin, lime juice, and garlic. Blend until fairly smooth.
2. Add corn
3. Heat the bean mixture in a saucepan over medium heat until thoroughly heated.
4. Ladle soup into 4 individual bowls, and top each with 1 T sour cream and 1/2 T green onion.

I like to withhold from the blender to have some whole in the soup. We also like to make quesadillas to dip.
