3/4 lb. lean ground beef
1/2 lb. ground veal
1/4 lb. ground pork
1 1/2 c. soft bread crumbs
1 c. light cream
1/2 c. chopped onion
3 tbsp. butter or margarine
1 egg
1/4 c. finely snipped parsley
1 1/4 tsp. salt
Dash pepper
Dash ground ginger
Dash ground nutmeg
1 recipe Gravy

Grind meats together twice. Soak bread in cream about 5 min. Cook onion in 1 tbsp. butter or margarine until tender. Mix meat, crumb mixture, onion, egg, parsley, and seasonings. Beat 5 min. at medium speed of electric mixer, or mix byu hand until well combined. Chill. Shape into 1 1/2 in. balls; brown in remaining butter. Remove from skillet. Make Gravy: add meat. Cover; cook 30 min., basting occasionally with gravy.
To make gravy: In skillet, melt 2 tbsp. butter with drippings. Stir in 2 tbsp. all purpose flour. Disslove 1 beef bouilon cube in 1 1/4 c. boiling water; add to flour mixture along with 1/2 tsp. instant coffee powder. Cook, stirring constantly, until gravy is thickened and bubbly.
