1 pork roast
3 cloves garlic, crushed
1/2 c. soy sauce
1/2 c. sugar
1/2 tsp. ginger
5 drops red food coloring
1/3 c. plum jam
1/2 tsp. prepared mustard

Directions:
Directions:
Combine garlic, soy sauce, sugar, ginger and food coloring for the marinade. Set aside 3 T. of this mixture. Marinade pork roast overnight. Cook pork roast at 325 degrees in a roasting pan covered with a lid or foil. Cooking time will vary depending on the size of the roast, but roast should cook a minimum of two hours. Use a meat thermometer as your guide thereafter. After removing roast from the oven, let it sit while combining the 3 T. reserved marinade, plum jam, and mustard in a small saucepan until heated through. Slice roast and serve with sauce on the side.
