2 (16oz) cans black beans, drained and rinsed
2 cups cooked white rice
1(10oz) pkg. frozen corn, thawed
1 sm. red onion, chopped
2 red bell peppers, seeded and diced
½ cup chopped cilantro
2 T. balsamic vinegar
¼ cup fresh lime juice
½ cup olive oil
¼ tsp. kosher salt
¼ tsp. black pepper
cilantro leaves for garnish

Directions:

In a large bowl, combine the beans, rice, corn, onion, red pepper, and chopped cilantro. In a small bowl, or measuring cup, whisk together balsamic vinegar, lime juice, and olive oil. Pour the vinaigrette over the salad mixture and toss well to coat. Season to taste with salt and pepper. Refrigerate before serving.
