4 c. plain, raw almonds
2 Tbsp. Tamari Soy Sauce (use aged, lower salt soy sauce)

Place almonds in large bowl, Sprinkle with Tamari Soy Sauce; toss well with big spoon.

Let sit an hour (as long it takes for the sauce to be absorbed) tossing now and then with the spoon until liquid is absorbed and nuts no longer look wet.

Spread on large, shallow pan, one layer deep and roast 275º oven for 30 minutes, then stir. Roast 15 minutes longer if needed (to taste).

Cool on pan. Store in air tight container.
