2 1/2 lbs cooked and cubes potatoes
1/2 cucumber, diced (no seeds or skin)
1/4 onion, diced (I like sweet onions)
2 or 3 hard boiled eggs, cut up
1 carrot shredded (for color)





Dressing
1/4 cup sugar
1/4 cup white vinegar
1 egg
2 tsp prepared mustard
sprinkle of celery seed
1 cup of mayonnaise

Directions:

Mix dressing ingredients except mayo in a small sauce pan over medium heat until thickened. Whisk occasional. Let cool and mix into the rest of the ingredients. Salt and pepper to taste. Refrigerate until ready to use.
