2 oz. light cream cheese
1/2 c. shredded cheese
1 tbsp. mayonnaise
8 medium jalepeno peppers
1/4 c. egg substitue (or 2 eggs beaten)
3/4 c. cornflake crumbs (or bread crumbs)

Directions:
Directions:
Preheat oven to 350º coat a large cookie sheet with cooking spray. In a medium bowl, combine cream cheese, cheddar cheese, and mayo. Mix well and set aside. Halve jalepenos lengthwise and remove the seeds. Stuff the jalepenos with cream cheese mixture. Place egg in a shallow dish, place cornflake crumbs in a sperate shallow bowl. Dip stuffed jalepenos in egg, then roll in cornflake crumbs and set on baking sheet. Bake until filling is bubbly, about 30 minutes and serve hot.

The seeds are what makes the jalepenos hot, if you like this kick add some of the seeds to the cream cheese mixture before stuffing hte jalepenos.
