2 6 oz. salmon fillets
All Natural PAM Cooking Spray
1/4 t. salt
1 T. blackened seasoning
SALSA:
1 lg. ripe mango, peeled and coarsely chopped
1/4 c. finely chopped purple onion
2 T. chopped fresh cilantro
1 T. chopped fresh mint
3 T. orange juice
1 jalapeņo pepper, seeded and minced
1/4 t. ground cumin
1/4 t. salt

Directions:
Stir together all salsa ingredients and chill. Sprinkle salmon fillets evenly with salt and blackened seasoning. Spray large skillet with cooking spray for 2 seconds and heat over medium-high heat. Place salmon in skillet. Cook 4-6 minutes on each side or to desired degree of doneness. Serve immediately with Mango Salsa.
