1 cup butter at room temperature
1/2 cup sugar
1 1/2 T. grated lemon peel
1 egg yolk
1 T. lemon extract
1/4 t. salt
2 1/4 cups flour
powdered sugar

Directions:
Directions:

Preheat oven to 375°F.

Cream the butter until light. Gradually add the sugar and beat until light and fluffy. Beat in lemon peel, egg yolk, extract and salt. Add the flour and beat until just blended. Roll into balls by tablespoonfuls. Set balls on ungreased baking sheets, spacing 3" apart. Dip the bottom of a 2 1/2" glass into additional granular sugar and press down on the balls to flatten to 1/4".
Bake until edges begin to brown, about 10 minutes. Transfer cookies to wire racks to cool. While cooling sift powdered sugar on the top of each cookie.
