1/2 pound dried great northern beans
2 tablespoons vegetable oil
2 cups onions, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
Freshly ground black pepper
10 cups water/chicken broth
4 ham hocks
2 bay leaves
Salt
1 tsp sugar

Directions:
Directions:
1. In medium saucepan with lid, over medium heat, heat oil.
2. When oil is hot, sear ham hocks in batches until brown, about 4-6 minutes. Remove the ham hocks and set aside.
3. Add the onions. Season with pepper. Sauté' for 2 minutes.
4. Stir in the beans and bay leaves. Season with pepper. Sauté for 1 minute.
5. Add the ham hocks, sugar and water. Bring to boil and reduce heat to medium low and simmer for 2 hours, or until the meat falls off the bone and the beans are creamy.
6. Remove the bay leaves and adjust seasoning with salt and pepper.
7. Serve with rice and yellow cornbread.
