Dough~
1/2 cup softened shortening {crisco sticks do well}
1 cup sugar
2 eggs
2 tbsp. whipping cream
1 tsp. maple extract
2 1/2 cups flour {no self-rising}
1/4 tsp. baking soda
1/2 tsp. salt

Filling~
1 1/2 cups raisins {ground up}
1/2 cup sugar
1/2 cup water
2 tbsp. lemon juice

Directions:

Mix together flour, then sift & add baking soda & salt. Beat sugar, shortening, eggs, whipping cream & maple extract. Combine all ingredients. Chill dough while preparing filling. Filling~ Mix all ingredients together & simmer slowly on stove about 5 minutes. Let cool. Roll out dough on floured surface {add more as it becomes sticky} Roll dough about 1/8 inch thick. Use a glass or an empty soup can to cut circles into the dough. Put 1 heaping tsp. of filling onto center of cut dough. Cover with another piece of dough. press edges together with finger or a fork. Bake at 400º for 8~10 minutes on ungreased cookie sheet.
