2 cucumbers, peeled and diced
2 beefsteak tomatoes, diced
4 cloves garlic, finely chopped or diced
1 red onion, coarsely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced

2 tbsp olive oil
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
2-3 cups tomato juice
1 tsp black pepper
1 tsp salt

Directions:
Directions:
Mix the first 6 ingredients together in a large glass bowl or ceramic bowl.
Then add the rest of ingredients. Toss to combine.
Next place the mixture in a food processor with steel blade and pulse until it is the desired consistency. Cover and refrigerate for at least 4 hours.
Garnish with herbs (cilantro or parsley) and cayenne pepper
