6 chocolate wafers, finely crushed
1 1/2 cups light cream cheese
1 c. sugar
1 c. of 1% low fat cottage cheese
1/4 plus 2 tbs. of unsweetened cocoa
1/4 c. all purpose flour
1/4 c. of amaretto
1 tsp. vanilla
1 egg beaten
2 tbs. semi-sweet chocolate chips

In a 8" spring form pan, sprinkle the chocolate crumbs over the bottom of the pan, then set it aside. In a large mixer bowl, combine cream cheese, sugar, cottage cheese, unsweetened cocoa, flour, amaretto, vanilla, salt and beat until smooth. Add the egg that's been beaten, on low speed. Remove from mixer. Fold into the mixer bowl the melted chocolate chips. Slowly pour the batter into a cake pan over the chocolate crumbs. Bake in a preheated oven of 300º for 50 minutes. Cool on a rack for 1 hour, then cover with plastic wrap and refrigerate if for 8 hours or overnight. Remove the sides of springform pan. Run a sharp knife between the cake and the sides of the pan. To Serve: A dot of whipped cream may be added to top of each individual piece.
