Boil Hen(s) according to the number you'll be serving--I boil in chicken broth with onions, carrots, and celery chopped up and tossed in. Simmer until chicken is done. Let cool, remove from broth and debone.

Now here comes the easy part! Cut flour tortillas in bite size strips and drop in boiling broth. Put chicken in when dumplings are done. Voila!
If planning this for supper, toss hen and vegetables into crock pot and cook all day on low...then make dumplings when you get home!
