2 cups heavy cream
5 egg yolks
½ cup sugar
1 Tbsp. vanilla

Preheat oven to 275B. Whisk the cream, egg yolks, sugar, and vanilla together in a bowl. Mix it all up until it is nice and creamy. Pour into 6-7 ounce ramekins. (I have 6 ounce Pyrex custard dishes.) Place ramekins in a 9 x 13 pan. Fill baking pan with hot water, about halfway up the sides of the dishes. Place the pan with the ramekins in the oven for about an hour. The creme brulee should jiggle just a little bit. Different ovens may require different cooking times. A knife may or may not come out clean. Remove pan from oven and remove ramekins from

the pan to the counter. Cool about 30 min. and place in the refrigerator over night. Sprinkle a thin layer of light brown sugar over the top of each dish. Make sure it is a THIN layer, but also covers the custard. Torch it if you have a kitchen torch or melt under the broiler until sugar melts and caramelizes. Chill again if necessary.
