1 tbsp. unflavored gelatin
1/4 c. cold water
6 egg yolks, beaten
1 1/2 c. sugar, divided
Juice of 2 lemons
6 egg whites
1 angel food cake
1 c. whipping cream
Directions:
Directions:
Soften gelatin in water. Beat yolks and add 3/4 cup sugar. Add lemon juice and cook in a double boiler until thick. Remove from heat and add gelatin. Cool. Beat whites, add 3/4 cup sugar gradually. Beat until very stiff. Fold into cooked egg yolk mixture.
Tear angel cake in pieces. In angel food pan or Bundt pan, alternate layers of torn cake and lemon mixture until all is used. Chill several hours or overnight. Unmold and frost with whipped cream. Refrigerate until ready to serve.
