Ingredients: 3 egg yolks 2 tbsp lemon juice 1/2 tsp salt 1/4 tsp white pepper few grains of cayenne pepper 1/2 cup softened butter

Directions: |
Directions:Place all ingredients into the glass container of a blender. Cover and whirl until well blended. Then remove cover and gradually pour 1/2 cup boiling water into the center while blender is running; Put cover back on and blend about one minute or until perfectly smooth. Remove to the top of a double boiler and cook over hot water stirring constantly about 3 minutes or until the sauce thickens. Keep warm over hot water stirring occasionally. |

Notes: This is a never fail recipe and is so good! That being said, I also recommend that you keep a few pkts of McCormick Hollandaise mix in the pantry...its great to fall back on if you don't have all the ingredients on hand or if you are in a big hurry. Just sprinkle a bit of paprika on the top when you serve it and no one will be the wiser!
