4lb. chicken or chicken breasts
2 tbsp/ vegetable or olive oil
2 tbsp. roux
3 cloves of garlic finely chopped
1/2 tsp. salt
1/2 tsp, cayenne pepper
1 small white onion chopped
1/2 cup celery finely chopped
1/2 bell pepper chopped
1 cup diced stewed tomatoes
1 cup okra (fresh or frozen)
1/2 tsp. of gumbo file can be substituted for the okra

Remove skin and fat, cut-up chicken
Saute chicken in oil until juices run clear
Add roux and all remaining ingredients
Stir well
Add water to cover chicken and vegetables
Simmer for 1 hour
