Leftovers and gravy or broth of one roast beef
2 onions quartered
3 carrots thin sliced
3-4 stalks of celery sliced
Potatoes

Directions:
Directions:
Chop up roast and place with gravy/drippings in a large pot. Toss in onions, carrots, celery and either small red potatoes, or peeled and sliced russet potatoes. Add a cup of water and a cup of beef broth and a 1/2 cup of red wine if you have some opened. Bring to a boil, then lower heat and simmer until potatoes are done.

Karin B shared this recipe with me a few years ago. Her Mom used to make it for their family. Now it is one of my favorites to make when we've had enough of the roast! It can be frozen for days when you don't want to cook.
