1/2 cup butter
4 fish filets
Salt and pepper, to taste
1/2 cup lemon juice
1/4 cup Parmesan cheese
Paprika, to taste

Directions:
Directions:
Melt butter in 9x13-inch baking dish in 400º oven. Season fish with salt and pepper. Place in butter in prepared dish, turning to coat well. Bake at 400º for 10 to 15 minutes or until fish flakes easily, reducing oven temperature to 350º to 375º if butter browns too quickly. Pour lemon juice over pan. Sprinkle with cheese and paprika. Broil for 5 minutes.

Mozzarella cheese can be substituted for Parmesan. Also, tilapia and flounder filets work the best!
