1 (10oz) package frozen chopped spinach
2 Tbsp butter
1 large onion chopped
2 green onions chopped
2 fresh Jalapeno's cleaned and chopped
1 can (10 3/4 oz) cream of chicken soup
1 8oz sour cream
1 tsp Ground Cumin
1 bag of Doritos, can use nacho or white corn.
6 C cooked chicken, cubed
Shredded cheddar cheese

Saute Onions and Jalapenos stir in spinach, soup, sour cream and Cumin. Crunch up chips.
In a baking pan layer chips then Cubed chicken, spinach mix then cheese, repeat 2-3 times depending on how much mix and chicken you have.
Bake @ 350º for 10 minutes, sprinkle with more chips then cheese and bake 10 more minutes. Serve with sour cream, Guacamole (if you want) and tortilla chips or left over nacho chips.

You can make this as hot or mild as you want, when you clean the jalapeno remove all of the insides and seeds to make it very mild or leave some of the white edges and seeds to make it hot.
