"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 cup almonds or chopped cashews
1 pkg oriental Raman noodles with seasoning packet

Dressing:

1/2 cup sugar
2 T. Soy sauce
1/2 cup oil
1/3 cup red wine vinegar

1 bunch romaine lettuce
1 bunch boc choy
1 bunch green onions

Directions:
Directions:
Toast on cookie sheet till golden brown the almonds/cashews with Raman noodles (broken up into small pieces) and the seasoning packet. I use 350º oven for about 5-7 minutes. You want then light brown in color. This can be stored in a jar or baggie for many days ahead.

Mix dressing ingredients and store in a jar or tupperware shaker ahead of time. I usually store this 8 hours or more ahead to get the flavors mixed.

Toss the lettuce, boc choy and green onions together.

When ready to serve-add dressing and toss.

Personal Notes:
Do not mix dressing with lettuce ahead of time. Wilts quickly, but at my house or event there usually isn't any left over's.
