Dressing:

1/2 c. sugar
1 tsp. dry mustard
1 c. oil
1/3 cup vinegar
garlic salt to taste
1/2 tsp. Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
1/3 cup Parmesan cheese

1 lb. fresh spinach
2 hard boiled eggs
5 strips cooked bacon
bean sprouts (optional)

Prepare dressing ahead of time. Shake ingredients together in a jar. Lettuce may be added to the spinach if desired. Chop the eggs and add to the salad greens. Crumble bacon and add; toss in bean sprouts if used. Add dressing just before serving.

Dorothy Buboltz loved this salad. I usually only use spinach. Due to her macular degeneration she liked to eat a lot of spinach. FYI: Also red wine is good for our eyes in preventing macular degeneration. Cheers!
